HEALTHY BANANA PIE
The idea of making banana bread came to me because I was treated to it several times this year. What I like the most - it can be prepared more healthily than other similar cake-like products - without added sugar and without classic wheat flour, and the preparation process is pretty simple.
I looked up one of the recipes available on the Google and made my first banana bread in my life. It turned out less sweet and quite dry... So I decided to introduce some changes in the ingredients and proportions of the recipe, which resulted in the juiciest and tastiest banana bread I've ever eaten! And now this delicious banana pie has also visited the holiday table of several relatives and earned compliments and recognition!

NEED:
- 4+1 medium sized bananas
- 160g whole grain oat flour
- 100g coconut flakes
- 1 egg
- 1 cup (~ 200g) kefir or unflavoured, unsweetened yogurt
- 70g oil or melted butter
- 2 tea-spoon baking powder
- 2 table-spoon peanut butter
- 2 tea-spoon cinnamon
- 200g dried fruit mix (dates, plums, cranberries)

Peel four medium bananas and squeeze them in a bowl or grate them on a grater, add egg, kefir, oil and mix thoroughly. In another separate bowl, add all the dry ingredients - oat flour, coconut flakes, baking powder and cinnamon - mix everything thoroughly so that the ingredients are evenly mixed together. Then pour the flour mixture into the bowl of mashed banana and mix thoroughly until a thick, homogeneous mass is formed. Add peanut butter and washed, chopped dried fruit. I usually cut the dates and plums into smaller pieces, but I don't mince the cranberries. Approximate ratio for dried fruits - 50g plums, 50g dates, 100g cranberries. Optionally, other dried fruits and/or fresh berries and/or nuts can be added.
When all the ingredients have been added, take a baking form (20x20cm), line it with baking paper, pour the dough into the form and lightly push one lengthwise whole banana into the dough. Place the baking form in a preheated oven and bake for 45 minutes at ~175-180°C. After the first 10 minutes, put a sheet of foil paper on top so that the surface does not overcook.
Serve chilled at room temperature.
